Afternoon Fruit & Cheese Cake
Ingredients
250g/8oz flour
1 tablespoon baking powder
Pinch salt
250g/8oz Welsh butter
250g/8oz dark brown sugar
4 eggs
1 teaspoon vanilla essence
1 dessertspoon mixed spice
Grated zest of a lemon
100g/4oz dried apricots, chopped
75g/3oz sultanas
50g/2oz chopped hazelnuts
2 apples, peeled quartered, cored and grated
125g/5oz 'Caerphilly' cheese
1 tablespoon
Method
Oven temperature- gas 4, 175c, 350f, Grease a 23-25cm (9-10inch)-cake tin and line the base with baking parchment. Cream together the butter and sugar until light and creamy. Beat the eggs in one at a time. Sift the flour and baking powder together into a bowl, mix into the butter mix a little at a time. Add the mixed spice, apricots, nuts, apple, sultanas and cheese, and fold in. Spoon into the prepared tin, smooth out the surface and sprinkle with the Demerara. Bake the cake in a preheated oven for 45-55 minutes. Remove from the oven and leave to cool slightly, then ease out of the cake tin and cool on a wire wrack.
