The British Asparagus season starts today – cause for celebration at Taste Inn Wales restaurants as this perky little veggie is one of our favourite things.
When the countryside starts to turn green, heralding the arrival of spring, asparagus spears will begin popping their heads up above the ground. For eight short weeks, from late April, this seasonal delight is abundant and it’s time for a celebration in the kitchen for those who love this luxurious vegetable.
Full-flavoured, deliciously sweet and tender, British asparagus is regularly described as the 'best in the world'. Get some from local growers if you can – farmers markets are great for finding the best, just picked, freshest asparagus. While the British climate ensures optimum conditions to achieve the perfect-tasting spear, the fact that it is grown here means that it can be quickly transported from field to our plates.

Everything in life is all worthwhile if you have views like ours. As we peer outside of the windows at Peterstone Court, we gaze over the flowing river and see an ocean of bluebells - they're out pretty early this year and you can't help but smile at the vibrant colours which now light up the place.

Its official, there's nothing we love more than our Mums. Proof positive this weekend, as we are delighted to report that Mother's Day was celebrated in big style in Wales - it was a positive sellout at all three of our restaurants. We served over 500 people with very special Mother's Day menus! And we have no doubt that the mum's of Britain deserve every break, every hug, kiss and treat we can give them to show our appreciation. Its a shame we only tell them once a year how much they mean to us. So, to all the Mum's who were given a day off and happily waited on by us, at The Manor, Peterstone Court and the Castle Hotel, we salute you! Anytime you need a break, please come again, we'll make sure you get looked after, appreciated and treated as you deserve 365 days a year.

There is a new star in Britain’s best kitchens, as fancy foams, splodges of colour across the plate and fine dining begins to wane, in favour of simpler foods. Top of leading chefs’ ‘most wanted’ list, the new gastronomy gadget taking the culinary world by storm is called a ‘Josper Oven’. Its not exactly a new invention as it originated from Northern Spain over 40 years ago, but the Josper is very new in the UK. There is only one in Wales and its right here at The Castle Hotel.

My tastebuds have a nose for identifying 'happiness on a plate' - its a bit like 'happy chickens lay good eggs' - you can just tell if a dish comes from happy chefs as soon as it arrives in front of you. Can anyone else or is it just me? I can tell if food I'm served has come from a harmonious, quality kitchen or one which is over-stressed or filled with unhappy staff. Its a handy signpost for anybody who likes to eat out. To me this is more important than entering the realm of the Michelin star.

A very happy St David’s Day from all the team here.
We are celebrating our Welsh roots proudly and loudly this week with some very special Welsh menus.
We all know that Saint David's Day is the feast day of St David, the patron saint of Wales. But did you know that it used to be a national holiday? The first day of March was chosen in remembrance of the death of Saint David as he died on that day in 589. The date was declared a national day of celebration within Wales in the 18th century and for centuries was a bank holiday for all. Sadly this tradition stopped in the 20th century.

This week's menu at The Castle is featuring oak roasted salmon, courtesy of our friends from the Black Mountain Smokery, Crickhowell. Smoked fish is a truly healthy option - full of good oils including Omega3, high in protein and minerals and very low in fat. Even better, it tastes amazing.
